Introduction

This slow cooker Mexican shredded chicken recipe is a total dream. It’s completely hands-off and made with only 3(!) store-bought ingredients, plus it’s perfect in tacos, salads, burritos, quesadillas, bowls, or nachos. I’ve always got the ingredients for this one on hand!

Recipe

Ingredients:

  • 1 (10 oz) can of green chilies
  • 1 (14.5 oz) can of diced tomatoes with green chilies
  • 1 lb boneless, skinless chicken breasts

Instructions:

  1. Place chicken breasts in the slow cooker.
  2. Add canned green chilies and diced tomatoes with green chilies.
  3. Cook on low for 6-8 hours or high for 3-4 hours.
  4. Shred the chicken with two forks.
  5. Serve hot, garnished with cilantro, lime wedges, and your favorite toppings!
