How to Make Vegan Chocolate Sea Salt Caramels

These vegan caramels begin somewhat like a classic caramel — with a butter-sugar mixture — but this version is made with just a little vegan butter and is naturally sweetened thanks to maple syrup. It’s subtly flavored with vanilla extract and has salt because sea salt + caramel = LOVE!

Ingredients:

  • 1/2 cup vegan butter
  • 1 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon sea salt
  • 1/4 cup tahini
  • Dark chocolate chips (at least 70% cocoa)
  • Flaky sea salt (for garnish)
  • Sesame seeds (for garnish)

Instructions:

  1. Line a baking sheet with parchment paper.
  2. In a medium saucepan, combine the vegan butter, sugar, corn syrup, and maple syrup.
  3. Place the saucepan over medium heat and cook, stirring occasionally, until the sugar has dissolved.
  4. Bring the mixture to a boil, then reduce the heat to medium-low and simmer for about 10 minutes, or until the caramel turns a deep amber color.
  5. Remove the saucepan from the heat and stir in the vanilla extract and sea salt.
  6. Let the caramel cool slightly, then stir in the tahini until well combined.
