The story of dulce de leche alfajores
Alfajores are of Arab origin and are typical of the Iberian Peninsula. It is a typical Christmas dessert from Spain, although alfajores with cornstarch and dulce de leche originate from Argentina. They are also consumed in Uruguay, Venezuela, Peru and other Latin American countries.

- 600 g flour
- 400g cornstarch
- 400g butter
- 300g of icing sugar
- 6 egg yolks
- 4 teaspoons of baking powder
- 2 teaspoons ground vanilla or cinnamon
- 1 tablespoon of brandy
- Lemon zest
- 1 jar of dulce de leche
Preparation
- Preheat your oven.
- Sift together all of the dry ingredients (flour, cornstarch, yeast and sugar).
- Beat the sugar with the creamed butter.
- Add the egg yolks one after the other until they form a tremendous cream.
- Add the vanilla or cinnamon, lemon zest and spoonful of cognac.
- Add the flour until you get a dough.
- Roll the dough right into a ball, wrap it in cling film and put it within the fridge for about quarter-hour.
- Stretch the dough and cut it into pieces using a cookie cutter or a round glass roughly 4-6 cm in diameter.
- Arrange them on a baking tray and sprinkle them with sugar.
- Cook them at 180°C for 12 to quarter-hour. Ideally, they mustn’t brown.
- Take them out of the oven and, while they’re still hot, put some dulce de leche in the middle.
Light recipe for alfajores with dulce de leche
These alfajores have the advantage of requiring only a few ingredients. In addition, since they don’t contain sugar or butter, they’re a lower calorie variant.
Ingredients
- 1/2 cup flour
- 5 egg yolks
- 1 tablespoon of cognac (or water)
- 1 jar of dulce de leche
Preparation
- Sift the flour right into a salad bowl.
- Add the yolks one after the other and the cognac or water.
- Mix. If you notice that it is rather dry, add somewhat more water or brandy.
- Cut the dough into circles and bake them in an oven preheated to 200ºC for about 8-10 minutes.
- Take them out of the oven and fill them with dulce de leche.
A number of suggestions
- You can cover them with grated coconut.
- You can melt dark, milk or white chocolate in a bain-marie within the microwave and canopy the alfajores with melted chocolate. To make it easier, you need to use a brush.
- You can add dried grapes on top for exceptional color and flavor.
- You may also simply sprinkle them with icing sugar.
- If you would like to give them one other flavor, you’ll be able to add somewhat honey to the dough (1 teaspoon per 300 grams of flour).
- Ideally, once the alfajores are prepared, they ought to be kept for between 24 and 48 hours in order that they’ve the correct texture.
